Carrot Raisin Salad

This Carrot Raisin Salad takes me back to my youth when it was one of my favorite salads. I was always pleased to see my mum had prepared this fresh and vibrant tasting treat. The only thing I regretted back then is that there was never enough in a family of five for me to have my fill of it. lol

4 large carrots grated
small handful of raisins
juice of ½ lemon

Just looking at the ingredients you can see this carrot raisin salad is simple, but it’s also very satisfying. It’s a nice little salad that makes a sweet treat and depending on the size could be a side dish or a complete meal.

Put the raisins in a small bowl and cover with clean water for at least ½ hour. Use the large grating holes of a cheese grater to grate the carrots into a medium sized bowl. Add the soaked raisins and lemon juice and mix together before serving. You can drink the soak water or save it for your morning smoothie.

If you make this carrot raisin salad ahead of time the raisins need not be soaked as they’ll pick up juice from the carrots and lemon. Great for a potluck too since it travels so well.

Sweet potatoes?

I've made a similar recipe with sweet potatoes. I'd like to see nutritional comparisons. Also I have a sweet tooth so I add apple juice for the liquid.

Sounds good Lily. I find the carrot with the raisins already pretty sweet so the lemon is a nice balance for me, but to each his own. I may try it with the sweet potatoes. Fresh tender parsnips might be good also.
