This Golden Beet Soupe is a wonderful mix of vegetables that complement each other as the flavors all come together in this tasty soup. The nutritional value of this soup is very high and will leave you feeling quite satiated.
Ingredients
1 golden beet with the green tops
4 to 6 stalks of celery
1 handful of cilantro
1 cucumber
1 fennel bulb
1 small Meyer lemon with rind
1” chink of fresh ginger root
1 avocado
1 red bell pepper
3 carrots
Directions
Chop all ingredients and blend until smooth, which is about 20 seconds in your high speed blender. When I say high speed I am referring to blenders like the Bendtec and Vitamix. If you blender is not as powerful you may have to blend smaller batches and mix together in a bowl. The picture shows the soup dressed with fresh fenugreek sprouts.
The golden beet is a nice change up from the traditional red beet and has a slightly different nutritional profile. Golden beets may be slightly sweeter than red beets, and have a little less earthy flavor. As you’ll see, golden beets are bright yellow when cut open and add that wonderful fresh color to this or any recipe. The nutritional differences come for the different phytonutrients found in the different colors of the beets.
Always try to buy beets with the tops on so you know you’re getting fresh food. The beet tops are great source of many vitamins including vitamin A, and are an excellent source of carotenoids and flavonoid anti-oxidants.
This recipe, like most of the blended soups on the site is really easy and quick to make and clean up. These soups are also very easy on the digestive system and can be incorporated into a cleansing program of any length. There are enough different soup recipes on the site to keep the palate from getting bored and then there’s your own imagination after that.
