Another quick and easy recipe, with super easy clean up. This soup is really rich with a deep spicy earthy taste. You could play with the ingredients and herbs/spices to suit your individual taste, but I really enjoyed it just as is.
1 small/medium beet
2 cups sundried tomatoes soaked in about 2 cups of water for 20 minutes
¼ small red cabbage
1 large carrot
2 large double handfuls of baby
spinach
1 peeled lemon
1 hot pepper
Chunk of fresh ginger root
1 tablespoon chia seed
Cut ingredients into chunks and add to blender, including soak water for tomatoes. Blend for about 20 seconds in your Blendtec or Vita-mix blender.
Other blenders may take a little longer. You could probably also do this one in a food processor too.
