This is a variation on the raw rice recipe posted on this site.
In a food processor, chop the napa cabbage and the cauliflower, and mix together in a large bowl. Chop the cilantro and arugula, spoon out the avocado flesh, zest and then juice the lemon(s), and mix all together with the cabbage and cauliflower. Enjoy!
Napa cabbage (1 medium head)
cauliflower (1/2 large head)
cilantro (1 small bunch)
arugula (1 large handful or approx 4 ounces)
avocado (1)
lemon (1-2)
