This is basically a substitution recipe. I got it from another recipe I saw for raw rice. It calls for using raw parsnips (I peeled them) instead of cauliflower as the rice. You put the raw parsnips in the food processor and chop finely just as you would with the cauliflower. I love them. And since I do cooked black beans, it's wonderful under the beans.
