Salad Supreme

Salad Supreme is a hearty dinner salad that will satisfy the appetite of any and all. The variety of fruits, greens, veggies and fats in this salad provide a broad spectrum of nutrition.

1 head romaine lettuce cut or torn into bite sized pieces
3 large tomatoes chopped
1 grated soft skin cucumber
1 grated zucchini
1 large grated carrot
3 stalks chopped celery
¼ bunch chopped flat leaf parsley

Use the large grating holes of a cheese grater to grate the cucumber, zucchini and carrot. Mix all ingredients together and toss.

Dressing: 1 avocado mashed with juice of 1 orange in a small bowl then poured over the salad.

This is a tasty alternative dressing for this salad or just about any salad for that matter. Mix 2 tablespoons of raw tahini with the juice from 1 orange in jar, tighten the lid and shake, shake, shake. Of course you could always do this in a small blender; I just prefer the easy cleanup of the jar.

Salad Supreme is a fabulous dinner salad that’s great for eating alone or entertaining. The variations are only restricted by your imagination. You could add just about any vegetable you can think of, I prefer to use Japanese, Armenian or other soft skinned cucumbers which are softer on the palate and easier to digest.

If you’re not following a 100% raw diet and looking to get in extra calories and or make digesting cruciferous vegetables easier then topping this salad with steamed broccoli or cauliflower is definitely a winner.
