These are great fun for the whole family to sit around and make their own roll-up using their favorite ingredients. My daughter who is experimenting with the raw diet loved these and asked to have them again just 2 nights later.
1 head of romaine lettuce
2 Armenian cucumbers (or other soft skinned cucumbers)
3 stalks celery
2 large handfuls of fresh sprouts
4 sheets of nori seaweed
raw cream cheese sauce
1 sweet red pepper (optional)
1 carrot shredded (optional)
Remove whole lettuce leaves and cut off the approx 3” to 4” of stalk end and set aside. Slice cucumbers and celery lengthwise and then cut into short strips. Cut nori sheets in half, then in half, and once again in half.
Place a lettuce leaf in your hand and spread a small dab of cream cheese sauce on upper leaf. Place a strip of nori followed by a large pinch of sprouts and several pieces of cucumber and celery. Add any other veggies at this time.
Fold the lettuce leaf over from the top and roll it up, folding one end in to keep the goods from falling out. That’s it, they’re ready to eat.
In the photo above I’ve used alfalfa/fennel and onion sprouts, but mung bean sprouts are really good in this recipe too. This recipe is good for one or two people with other veggies on the side.
