Recipes don’t get much simpler than Simple Sunflower Delight and still have great flavor and heartiness. This is great for potlucks as it travels well, or anytime you want a quick satisfying meal. Mixed with veggies or spooned into lettuce rollups this recipe is a winner every time.
List of Ingredients for Simple Sunflower Delight
1 C organic raw peeled sunflower seeds (not peeled in China if possible)
1 tsp Celtic salt (you could use seaweed here)
Thin sliced scallions ( green onions ) to taste and sight
Small diced jalapeno ( optional )
Directions
Put the raw sunflower seeds and the salt in a blender. Add purified water to just around the top of the seeds...blend.
Add water, as necessary, in small bits to get to where the blades keep blending.
When blended 'smooth' - put in a bowl and add the thin sliced scallions and jalapeno (if using). Can mound with an ice scream scoop... or small bowl in the center of lettuce, or whatever.
Top with a garnish of more sliced scallions or a sprig of parsley or whatever suits your fancy. In the photo they’re topped with what else, but fresh sunflower sprouts.
Nice to add a sliver of carrot or red radish or red pepper...however, I no longer advocate 'unpeeled' red peppers and the peeled red pepper is not as vibrant and dark a red. Put cut veggies or crackers around it ...for presentation...
Sunflower seeds are rich in potassium, manganese, phosphorus, potassium, selenium, zinc, copper, iron, magnesium, and calcium. They contain good levels of the following B vitamins as well, B1, B2, B3, B5, B6, folate, vitamin E, and a good source of omega 6, LA, protein and fiber.
