Summer Slaw with Crimini Mushrooms

This is a nice change up from the usual green salad. It’s quite filling and very juicy which I love. It’s really tasty as is, but you could put some raw salad dressing on it you wanted. I use a simple box grater to shred the veggies, but you could use your food processor.

2 zucchini squash shredded

2 carrots shredded

3 soft skinned cucumbers shredded

1 avocado cubed or spooned out in small pieces

2 cups mung bean sprouts

3-4 tomatoes chopped

5-8 crimini mushrooms chopped

½ small hot pepper diced

1” chunk of fresh ginger root diced

handful alfalfa-fennel sprouts (optional)

Mix all ingredients together in a bowl and enjoy. This recipe is good for two people or as a side for four or more.

Really great flavor
