This is one of my absolute favorite things to eat. It's so easy and delicious and satisfying, and I almost always have all three ingredients ready to go in my kitchen whenever the mood strikes.
Bananas (however many you're hungry for)
Medjoul Dates (approximately 1 large per banana - can use any moist date)
Romaine Lettuce (1 head makes a satisfying meal)
Rinse and dry the romaine leaves in a clean towel. Bring the leaves, bananas and dates to the table along with a plate or two. Assemble the wraps by laying one romaine leaf open on the plate, placing a section of banana along the spine on the bottom end, and then adding a piece of a date along with the banana. I find that the wrap stays together better if I press the bananas down into the leaf just a little. I usually use a third of a large banana or a half of a small banana for a large romaine leaf.
Then fold the other half of the romaine over the half with the fruit, and wrap the leafy sides around the bottom half, enclosing the fruit. The wrap resembles sort of an open burrito when assembled. Then eat and enjoy! Yum.
